My Simple Chicken Madras Recipe

Ingredients: Serves 4
- 500g chicken breast, cut into bite-sized pieces
- 1 large onion, chopped
- 2 garlic cloves, minced
- 1-inch ginger, grated
- 2-3 green chillies, chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 tsp chilli powder
- 400g canned tomatoes
- 150ml chicken stock
- 1 tbsp vegetable oil
- salt, to taste
- coriander leaves, to garnish
Method:
- Heat oil in a large saucepan over medium heat. Add onion and sauté until softened.
- Add garlic, ginger and green chillies and cook for 1-2 minutes.
- Add cumin, coriander, turmeric, garam masala and chilli powder. Stir to combine.
- Add chicken and cook for 5 minutes or until browned.
- Pour in the canned tomatoes and chicken stock. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, stirring occasionally.
- Season with salt to taste.
- Garnish with coriander leaves before serving.
