Simple Chicken Madras Recipe

Ingredients: Serves 4

  • 500g chicken breast, cut into bite-sized pieces
  • 1 large onion, chopped
  • 2 garlic cloves, minced
  • 1-inch ginger, grated
  • 2-3 green chillies, chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp chilli powder
  • 400g canned tomatoes
  • 150ml chicken stock
  • 1 tbsp vegetable oil
  • salt, to taste
  • coriander leaves, to garnish

Method:

  1. Heat oil in a large saucepan over medium heat. Add onion and sauté until softened.
  2. Add garlic, ginger and green chillies and cook for 1-2 minutes.
  3. Add cumin, coriander, turmeric, garam masala and chilli powder. Stir to combine.
  4. Add chicken and cook for 5 minutes or until browned.
  5. Pour in the canned tomatoes and chicken stock. Bring to a boil, then reduce heat and let it simmer for 15-20 minutes, stirring occasionally.
  6. Season with salt to taste.
  7. Garnish with coriander leaves before serving.
